ROASTED ROOT VEGETABLES

Ingredients

½ cup olive oil
2 Tbsp. Mediterranean Greek Seasoning Blend
2 Tbsp. Oh! So Onion
6-7 carrots, peeled and cut into 1" pieces
5 parsnips, peeled and cut into 1" pieces
1 medium butternut squash, peeled and cut into 1" pieces

Instructions

Preheat oven to 425°F. Combine olive oil, Mediterranean Greek Seasoning Blend and Oh! So Onion in a large bowl. Add the vegetables and toss to coat. Arrange vegetables in a single layer on a large baking sheet. Bake for 30-35 minutes or until tender.
